1 oz. Kubler absinthe
1/2 oz. Sambuca
3 oz. water
3 full size ice cubes

Absinthe is an acquired taste and can sometimes be too bitter. That's why sugar is often added. In this recipe the Sambuca acts as the sugar and since Sambuca has a strong anise flavor it heightens the "licorice" flavor of the absinthe while cutting the bitterness of the wormwood.

Use this recipe as a starting point for your tastes and the brand of absinthe you are using. I like this cocktail with a Swiss style absinthe like Kubler or La Clandestine.

Using this much ice is also a matter of taste and as the ice cubes melt the drink's flavor will change. It makes a good experiment for those who don't know how much water they like as it will reveal how the flavor changes as the water ratio increases.

All in all this simple recipe gives a very refreshing drink that is easy to balance to particular tastes, give it a try on a hot muggy evening.
