Born in the wilds of Alaska, Saint Monday cut his teeth in the underground bar scene at Machine Works in Seattle. Over the course of the next year, he quickly lost the gangle of youth while while learning the art of serving traditional cocktails at nightclub (read: lightening fast) speeds.

In 2001 Saint Monday came to work for Paul Nathan hosting his notorious absinthe parties in San Francisco. For the next five years he risked jail time managing the bar during these events. During that time he sampled most of the absinthe on the market, trained staff, and did his best to avoid the Po Po.

Since the ban on absinthe was lifted in 2007 Saint Monday has spent his time consulting with bars, liquor stores, and absinthe companies on how to set up and serve absinthe for the contemporary US market place.
